Thyme is one of the herbs that are much better when dried; its flavor gets even more intense.

Thyme is used for adding layers of flavor without being overwhelming. It’s commonly used to season soups, sauces, and stews. It also makes a welcome addition in potatoes, rice dishes, vegetables and even fresh bread.

In most cases, dried thyme is most effective if it is used during the early stages of cooking, just like bay leaves. This gives it time to infuse its flavor to the whole dish.
